Flavour Diversity

Rich Flavors from Ethiopia

In our single-origin coffee from Ethiopia, you’ll discover the fresh and tangy favors that characterize African coffee. This lightly roasted coffee reveals scents of bergamot and black tea with a refreshing citrus taste. The acidity in the coffee decreases the longer the roasting process continues, and in a light roast, it is preserved. That’s when the rich fruity favors emerge, providing you with an unusual taste experience compared to regular coffee.

Variation in Ethiopian Coffee

The coffee beans in our coffee come from the Sidamo Province, a signifcant coffee-producing region in Ethiopia. Flavor variations are common in Ethiopia due to different cultivation techniques. Terroir, similar to the wine world, plays a signifcant role in the favor profle, infuenced by factors like soil, precipitation, and altitude.

Altitude's Impact on Flavor

Different regions in Ethiopia offer distinct favor profles depending on the altitude of cultivation. For instance, the Yirgacheffe area in the south provides coffee with citrus and tea notes, thanks to its high cultivation altitude of nearly 2000 meters. On the other hand, the eastern Harar province offers a rounder coffee with chocolate notes.

Processing Coffee Beans

When coffee beans are harvested, the processing method is crucial for the favor. The dry method, where beans are dried in the sun with fruit pulp and skin, results in coffee with less acidity and a softer taste. On the other hand, the wet method is used in areas like the Sidamo Province, where coffee beans ferment in water, increasing acidity and providing a fruity favor.

Exceptional Coffee Processing

Our coffee beans are primarily sourced from renowned coffee-growing regions such as Sidama, West Arsi, Gedeo (Yirgacheffe), and Guji. Additionally, we have established a presence in Hambella Guji, Idedo Yirgacheffe, Nensebo West Arsi, and Cheri Sidama. These regions are celebrated for their production of the highest quality Fully-Washed, Honey-Processed, and New-Natural Specialty Coffee.

Ethiopian Coffee Regions

Sidamo Coffee Region:

Sidamo located in the southern part of Ethiopia, is one of the country’s most renowned coffee-producing regions. Sidamo coffee is cultivated in southern Ethiopia and is believed to be one of the closest regions to coffee’s ancient origins, dating back to the 9th century. It is characterized by its complex acidity, rich favor, and notes of berries and citrus, resulting in a well-balanced cup. Beans grown in this region are referred to as “strictly high-grown” because they are cultivated at elevations of 1500-2200 meters above sea level. These beans grow slowly, allowing them to absorb nutrients and develop favors over time. Sidamo coffee is best identifed by its distinct citrusy taste.

Yirgacheffe Coffee Region:

Yirgacheffe is a subregion within Sidamo and is one of the most famous coffee areas globally.
Just like Sidamo coffee, the favor profle of Yirgacheffe coffee can vary based on factors like elevation, coffee variety, and processing method. However, Yirgacheffe coffee is known for its complexity, elegance, and its ability to highlight delicate and foral favors. It is often classifed as one of the most exclusive and sought-after coffee varieties in the world.

Guji Coffee Region:

Guji a region in southern Ethiopia bordering Sidamo, has gained increasing recognition for its coffee production. This Ethiopian coffee is cultivated just south of the Sidamo region, producing a distinct floral coffee with notes of jasmine and melon and a light, almost tea-like body. The flavor profile of Guji coffee may vary depending on factors like elevation, coffee variety and processing method. The Guji region has gained recognition for offering a unique and exciting range of flavors, making it a favored choice for coffee enthusiasts who appreciate fruity and complex tastes.
